When people ask how The Salty Heifer came to be, the answer used to involve words like: “years of dedication”, and “a desire to feed the world”, and “for the power of comfort food”.
But that’s not the whole truth.
The whole truth is that the Heifer’s existence is largely due to the discerning palate of a precocious three-year-old. It was to please her that our namesake cookie was born, and once she bestowed upon it her seal of toddler approval, it was a wrap.

This story is rooted in nostalgia, but its also part dream and lots of stubbornness. I, Fany, was born and raised in Mexico and absolutely love food. When I turned one, my father decided to give me 1 kilo of chocolate truffles and though most of it ended on the floor and my face (quite thankfully actually), I feel that was where my love affair for sweet treats started.

I always loved going to the market with my sister and mom and was fascinated by all the stands that surrounded us. Many years later, when it came time to figure out what I was going to study I was going to go to art school as I didn’t even know cooking was an option but once I did there was no going back! My parents were not happy with that idea at all because they know the sacrifices you make in this industry and feared I would get burned out and not have many options afterward. The funny thing is that they wanted me to persue a career in arts which also presented an uncertain future but they thought was better. They let me attend a cooking school in Mexico for 2 years and said I could study wherever I wanted afterwards if I still wanted to, secretly thinking I wasn’t going to like it or would get bored. At the time there were only a hanfful of cooking schools in Mexico and I didn’t even know there where women chefs. I absolutely loved it and ended up going to The Culinary Institute of America and graduated in 1998. I did an externship at Akelare restaurant in San Sebastian , Stain, returned to New York and have been here ever since, I worked in several restaurants including Rosa Mexicano, La Cote Basque and Eleven Madison park.
In 2009 I spent a year doing research & traveling through Mexico to write my first book “My Sweet Mexico.” That experience changed my life and when I returned to New York I knew I wanted to share and celebrate the amazing frozen treats & sweets of Mexico.
I wanted to have my own business but I didn’t know what to do since I wanted to do it all. One day, I had a dream that I was goint to open a Mexican ice cream shop in New York and that’s how I decided to start with paletas, the quintessential frozen treat in Mexico. I thought I could test the idea without spending money on an ice cream machine and see how New Yorkers liked the sweet flavors of Mexico
So, in 2010 I heard about a new market opening up called The Hester Street Fair and I decided to apply and got in . I had two jobs at the time so my good friend Hannah helped me out that first summer. We rented a bakery on the Lower East Side of Manhattan and wuld go in when they were done, around 6 or 7 PM. Hannah would start and I would go after my job finished so I’d show up around midnight and start.
We started out with 5 flavors that I felt represented Mexico – mango chile, hibiscus, coconut, passion fruit and avocado. We made around 850 paletas for the weekend hoping that we could sell them throughout the weekend but really not knowing at all what to expect. While we were loading the cart, I fractured my nose with the lid! (that’s another story) but the adrenaline kept me going. There was much anticipation for the market and to our surprise, we sold out within a few hours!!!!
I headed to the ER to take care of my nose and by the end of the summer I had quit both of my jobs and started to plan for the following year.
The rest, as they say is history in the making….We now have several seasonal locations, have expanded our product line, have our first brick and mortar and are continuously and happily growing.
My mission is to share the sweetness of Mexico but I also strive to create the kind of company that people want to be a part of, to support, work for, and partner with. I have tried to build a strong local community in the relationships we build with customers, growers and anyone else that is involved. It is also important to me to support Mexico as much as I can by promoting and educating; by sharing a rich (and delicious) part of the culture and by giving back.

I have been living and working in Brooklyn for some 30 years surrounded by a creative environment. Over the years I have been making ceramics exploring all kinds of processes and materials. From earthenware to porcelain, functional to decorative and learning much along the way.

Our family’s olive groves were planted by our ancestors and flourish in an area where evidence of ancient Greek history can be seen and touched. It wasn’t long ago that our grandfather was working the land and came across ancient tombs and other antiquities in the midst of our groves. Indeed, from the artifacts that are often found to the local history and topography documented by literary greats such as Homer and Pausanias.
Our groves even provided inspiring scenery for cultural touchstones transferred to the soil as part of the terroir. Such cultural enrichment helps account for the desirability of our ancestral lands; which, as good fortune would have it, just happen to be in the perfect climate for growing our flavorful olives!
Messenia, and the region around Kalamata, is known as the region of Greece that produces the best olives and olive oils in the world. Any place else is second best. Twelve Letter Company olives are grown in an ancestral grove on an ancient, gently sloping hillside in the village of Koukounara.
Our olives are processed the old fashioned way, by climbing the trees and shaking and raking the tree branches to make the olives fall, and then gathering the olives to be pressed on the day they are picked – pure, unfiltered and without blending with other oils and fillers.

Brooklyn Brittle is a handcrafted, gourmet snack that offers a culinary experience. The base dough is composed of five core ingredients — flour, butter, sugar, pure extract, and sea salt — all undiminished by chemical additives, food colorings, synthetic flavorings, and artificial growth hormones. Infused with exciting elements from the Mediterranean table — dark roast espresso, fresh fruit, kalamata olives, oven roasted nuts, seeds, fresh organic herbs, grated parmesan, and intense chocolate — it becomes Brooklyn Brittle. A distinctive, biscuit-like treat with a range of unique flavors designed to satisfy every conceivable craving.
It was from my grandparents, natives of L'isola del Giglio, a Tuscan island in the Mediterranean Sea, that I learned time honored baking techniques and classic family recipes, including “brittle.” Made with five simple ingredients and baked in the oven, we called it “brittle” for its grainy texture and for the way the shapes of the pieces, broken by hand, resembled traditional candy brittle. Faithful to my baking beginnings, I continue to use my grandparents’ brittle recipe as the landscape for imaginative flavor combinations celebrating the old and embracing the new!

My name is Kristen Ginn and I'm totally obsessed with cookies. I am a high level handbag designer in the fashion industry and needed a way to relieve the stress of my job, so I started baking. I quickly realized the hole in the market for baked goods, nostalgic, obscure and fun references that target people my age (unfortunately labeled "millennials"). I started creating and sharing my cookies on Instagram and quickly gained a large following. Now, my small home proccessed cookie business is the thing I look forward to working on everyday! Amuse Pooch Dog Treats launched in late August of this year. We produce our treats in a commercial kitchen in Long Island City. Our Chicken Chips are 100% chicken breast and our Sweet Potato Chips are simply sweet potato and coconut oil. We have a beautiful holiday label in Merry Christmas or Happy Holiday and like all of our products can be personalized with the dogs name and/or picture.
